Here’s a list of what you need:
Wash and chop in cubes your vegetables. Add them all to the pan except for the tomatoes and reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20 - 30 minutes. Add the tomatoes for a couple of minutes. It keeps well and tastes better the next day but for more flavors add in herbs like rosemary or basil or homemade chicken stock or vegetable broth!
