Net Carbs:
- With Coconut Flour: 3.6g / serving
- With Almond Flour: 4g / serving
Ingredients:
Using coconut flour
1/2 cup (50 g) coconut flour
3 tsp xanthan gum (levelled)
8/9 tbsp boiling hot water
Dash Himalayan salt
Dash paprika
Using almond flour:
One cup (100 g) almond flour
3 tsp xanthan gum (levelled)
6 tbsp boiling hot water
Dash Himalayan salt
Dash paprika
Step By Step Instructions:
- Mix dry ingredients and start adding water gradually until the dough is formed.
- Combine well then cover with cling film and let it rest for 15 min
- Roll it between two cling film sheets of parchment paper. Roll it thin ¼ cm
- Cut the dough lengthwise into thin strips ( don’t focus much on shape, fries aren’t meant to be one size)
- Heat one cup of Coconut oil (medium to low heat) and fry your strips until golden
- Finish your fries by sprinkling them with Himalayan salt and paprika
- Serve hot with sugar free Ketchup!
Cooking Tips From Salma:
- Use boiling water or else xanthan gum won’t get activated
- If you are using almond flour the dough is much stickier than while using coconut flour so don’t panic!
- You need to let the dough rest for 15 minutes to give the xanthan gum time to work and bind ingredients, don’t rush this step
- Roll it thinner than usual if you are using coconut flour because it will puff while frying
