Is there anything better in the world than the smell of warm bread? We seriously doubt it. Did you know that a study done in 2012 found that the aroma of fresh-baked bread makes us kinder to strangers? The researchers connected pleasant smells to better moods and good deeds to strangers.

However, as much as we love bread, some people can only enjoy its smell and not its taste because of preexisting conditions, like gluten allergies. Sunchef’s Souraya Aouad suffered from a condition called candida in 2019. Candida is a yeast infection that caused problems for Souraya whenever she digested any sort of food containing yeast. As you can imagine, this affected her digestion and her mood. Since she absolutely loves bread, Souraya refused to give it up! She decided to create a guilt-free loaf. It’s easy to make and doesn’t require kneading, so the whole process is faster than baking regular bread!

UTENSILS

You will need:

  • Bowl
  • Tablespoon
  • Bread baking mold
  • Baking paper

INGREDIENTS

  • 1 cup sunflower seeds
  • 1/2 cup chia seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup ground flax seeds
  • 1/2 cup sesame seeds
  • 1/2 tsp sea salt
  • 1 tbsp maple syrup
  • 1/4 cup tahini
  • 1 1/4 cup water

DIRECTIONS

Relax your arms; this bread does not require kneading. Now that the most tedious part is sorted out, let’s get started!

Step 1

In a large bowl, combine all dry ingredients - sunflower, chia, pumpkin, ground flax, and sesame seeds.

Step 2

Mix the seeds well with a spoon.

Step 3

Once satisfied, pour the tahini over the seeds, then the maple syrup, and finally, add the water. 

Step 4

Mix the ingredients well together with the spoon until they form a dough.

Step 5

Set the oven to 150° C / 300° F. While waiting for the oven to heat up, line your bread mold with baking paper. Transfer the mixture into the loaf pan and decorate the top with extra seeds before putting the bread in the oven.

Step 6

Bake for about 20 minutes until a skewer comes out clean. Let the bread cool down completely before cutting into it, and use a serrated knife to cut it.
