Today, we’re working on brownie cups that are vegan, gluten, dairy, and refined sugar-free! They are naturally sweetened with maple syrup. It not only provides sweetness but also holds the bars together. You can substitute maple syrup with raw honey as it is also a refined sugar-free option.
Sunchef suggested this recipe to show that we don’t need to only focus on fruits and veggies to stay healthy. We can find different and better alternatives to satisfy our cravings. So if you’re craving some sweet snacks, this dessert is perfect with its natural sweetener. It will keep you from joining the dark, unhealthy side. Brownie cups freeze wonderfully for a last-minute dessert that’s guaranteed to elicit lots of praise. Although these don’t taste exactly like traditional butter and sugar-based brownies (totally different ingredients), they are chewy, rich, full of chocolate, and a great way to satisfy that sugar craving.

BROWNIE BASE INGREDIENTS
- 1 cup almond flour
- 3/4 cup walnuts
- 1/2 cup cocoa powder
- 1/3 cup maple syrup
- 1/3 cup Sunchef’s runny almond butter
- 2 tbsp unsweetened dairy-free milk
DATE CARAMEL INGREDIENTS
- 10 large pitted Medjool dates
- 1/3 cup unsweetened dairy-free milk
- 1/3 cup Sunchef almond butter
- 2 tbsp room temp coconut oil

Making these no-bake brownies is so ridiculously fast and easy! This recipe is divided into two easy parts. So let’s get started!
I - Making the brownie base
To start, dump 1 cup of almond flour into the food processor. Then, 3/4 cup of walnuts, half a cup of cocoa powder, 1/3 cup of maple syrup, 1/3 cup of Sunchef’s runny almond butter, finally, 2 tablespoons of unsweetened dairy-free milk.
Blend the mixture until a thick dough forms.
Grab your muffin or cupcake pan, put a paper cup in each hole. Next, grab some of the dough with your hands and spread it evenly at the base of a cup. Repeat for all.
II - Making the caramel topping
Before attempting this recipe, you can soak the dates for a few minutes, so they get softer and easier to break.
Grab your f0od processor again, drop the 10 large pitted Medjool dates inside. Then, 1/3 cup of Sunchef almond butter, 1/3 cup of unsweetened dairy-free milk, and finally, 2 tablespoons of room temperature coconut oil.
Blend your mix until it is smooth and the color caramel brown.
Pour the caramel mixture on top of the cups. Decorate with Cacao Nibs. Now your cups are ready to be refrigerated! Freeze for 15 minutes and enjoy.
Tip: From something as simple as nuts to fresh fruits, these cups can be decorated with a wide variety of toppings. Feel free to use whatever you have on hand to customize a tasty treat.
