Forget all you know about cookies and get amazed by how much easier this recipe is than classic chocolate cookies. No need for eggs, milk, or gluten flour! The taste will remain the same if not better. 

These cookies are perfect to whip up in case of any last-minute guests showing up at your door (or some after midnight munchies). You might want to call them ‘summer cookies’ because they will cool you down. Beware though, these are so tasty, they’re super addictive!

Ready to not bake? Here’s what to do.

UTENSILS

You will need:

  • Bowl
  • Tablespoon
  • Baking tray
  • Baking paper

INGREDIENTS

  • 1/2 cup almond flour
  • 1/2 cup oats
  • 1/2 cup nut butter or chocolate peanut butter
  • 1/4 cup maple syrup
  • 2 tbsp ground flax seeds
  • 1/4 cup desiccated coconut
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp cacao nibs
  • 1-2 tsp chia seeds

DIRECTIONS

Step 1

Prepare all your ingredients and put them all in the bowl. Mix them all together well until you have a paste. 

Step 2

Then take small chunks of this paste and form balls. After lining your baking tray with baking paper to avoid stickiness, flatten the balls lightly using your fingers. 

Step 3

Freeze for 30mins. Take a generous bite and enjoy!

Keep your cookies stored in the freezer in an airtight container for up to 3 days.
