Certified Holistic Health Coach and Mint Basil Expert Tamara Quaddoumi is back with this super easy, super fresh, and super loaded summer salad that will leave you coming back for more and more and more! Great for lunch or dinner, and a definite crowd-pleaser at your next party!

INGREDIENTS

Salad:

  • 2 Bunch Kale (or greens of choice)
  • ¾ Cup Cooked Quinoa
  • ½ Cup Dried Cranberries
  • ½ Cup Grated or Shaved Parmesan Cheese (or Nutritional Yeast)
  • ½ Cup Sliced Almonds, plus extra for topping

Dressing:

  • ¼ Cup Lemon Juice
  • ⅓ Cup Olive Oil
  • 3 tbsp. Tahini
  • 2 tbsp. Honey
  • 2 tbsp. Red Wine Vinegar (or regular vinegar)
  • 1 Clove Garlic, Mashed
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper

 

INSTRUCTIONS

Start by adding kale - or greens of choice - to a bowl and seasoning with salt, making sure to rub the salt evenly into the kale. 

In a glass jar, combine lemon juice, olive oil, tahini, honey, vinegar, and mashed garlic clove, then tightly seal the lid and shake the jar well.

Add cooked quinoa to the bowl and pour the dressing over, then mix in dried cranberries and sliced almonds. Sprinkle grated parmesan cheese over the salad, and ENJOY!
