After sharing her best tips on properly sanitizing and storing fresh produce, Health Expert Hitaf Zwein now shows us how to take everyday vegetables from our fridge to create a delicious and nutritious Lebanese-style vegan lentil salad.
For this recipe, you will need:
- Large Saucepan or Pot
- Fine Mesh Strainer
- Mixing Bowl
- Mixing Spatula or Spoon
- Glass Jar
You can find all these ingredients on Mint Basil Market:
- 1/2 Cup Lentils
- 3 Chopped Tomatoes
- 2 Chopped Cucumbers
- 1 Chopped Bell Peppers
- 1/2 Cup Chopped Lettuce
- 1/2 Cup Chopped Parsley
- 1/2 Cup Chopped Mint
- 1/2 Cup Chopped Arugula
- 1 tsp. Himalayan Salt or Sea Salt
- 1 tsp. Black Pepper
- 1 Garlic Clove
- 1/4 Cup Tahini
- 3 tbsp. Extra Virgin Olive Oil
- 1 tbsp. Water
In a large saucepan or pot, bring salted water to a boil and add 1/2 cup of lentils. Boil the lentils until fully cooked, strain, and leave to completely cool off.
In a mixing bowl, combine half a cup of each of chopped tomatoes, chopped cucumbers, chopped bell peppers, chopped lettuce, chopped parsley, chopped mint, and chopped arugula.
In a glass jar, add salt, black pepper, garlic, tahini, extra virgin olive oil, and water. Tightly seal the lid of the jar and shake the jar until a liquid dressing is formed.
Add the cooled lentils to the bowl and mix to create your salad, then drizzle and stir the dressing into the salad.
And voila! Your delicious and nutritious vegan lentil salad is ready to serve. Enjoy!
