Back To School Pizza Egg Muffin By Tamara Quaddoumi

Back to school treats just got a whole lot easier! This Pizza Egg Muffin by Certified Holistic Health Coach and Mint Basil Expert Tamara Quaddoumi is the perfect meal prep for all ages - and a great way to sneak in your veggies!
 

INGREDIENTS

  • 12 Eggs
  • 1/4 Cup Almond Milk
  • 3 tsp. Tomato Paste
  • 1 tsp. Dried Rosemary
  • 1 Cup Chopped Mushrooms
  • Bunch of Spinach
  • Bunch of Basil
  • 1 Onion
  • 1 Small Yellow Bell Pepper
  • 1/2 Green Bell Pepper
  • Vegan Cheese (or any cheese of choice)
  • Black Olives
  • Salt & Pepper to Taste

 

DIRECTIONS

Grab a muffin tin and oil each compartment really well so that nothing sticks.

Finely chop and combine all your vegetables and herbs and season with salt and pepper to taste. Then add equal portion of mixed veggies and herbs into each compartment of the muffin tin.

In a bowl, whisk in 12 eggs, almond milk, and tomato paste until combined. Place 1/4 cup of the egg mixture over the veggies in each compartment of the tin, then top with chopped olives and cheese curds.

Preheat your oven to 175 degrees Celsius, and bake for 25 to 30 minutes. Once out, butter a spatula to easily scoop the muffins out, and enjoy!
