Back To School Soft Banana Cookies By Tamara Quaddoumi

These gluten-free, dairy-free soft banana cookies are the perfect lunchbox treat for your little ones! They're super tasty, super nutritious, and super easy to make - and you already have all the ingredients in your kitchen!

  • 2 tbsp. Melted & Cooled Extra Virgin Coconut Oil
  • 1/2 Cup Mashed Ripe Banana (medium size)
  • 1/4 Cup Organic Coconut Sugar
  • 1 Free Range Egg (room temperature)
  • 1 tsp. Vanilla Extract


  • 1 &1/4 Cup Packed Almond Flour
  • 1/4 Cup Coconut Flour
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Cinnamon Powder
  • 1/4 tsp. Himalayan Salt


Start by preheating your oven to 175 degrees Celsius.

In a bowl, start by combining your wet ingredients - your banana, coconut oil, melted coconut sugar, egg, and vanilla extract - then mix in your dry ingredients - almond flour, coconut flour, baking soda, cinnamon powder, and salt.

Next, make cookie shapes with the dough by scooping out small dough balls and pressing them down with your fingers on a baking sheet inside a baking tray.

Bake for 9 minutes, and there you go! You can add peanut butter or almond butter on top, and decorate with berries or chocolate chips! 

Make sure not to over-bake as they’re suppose to be soft, and store in the fridge for maximum freshness.
