Banana Oatmeal Pancakes

Take your pancakes to the next level with this super easy, super tasty, and super healthy banana oatmeal pancake recipe! Loaded with protein and fibers to keep you fuller for longer, these fluffy pancakes are also naturally gluten-free, dairy-free, and added sugar-free - and can be made right in a blender!

BATTER INGREDIENTS

  • 2 Medium Ripe Bananas
  • 2 Free Range Eggs
  • 1/2 Cup Almond Milk (or Milk of choice)
  • 1½ Cups Rolled Oats (Gluten-Free, if desired)
  • 2 Scoops Protein Powder (optional)
  • 1 tsp. Vanilla Extract
  • 2 tsp. Baking Powder
  • 1 tsp. Ceylon Cinnamon Powder
  • ¼ tsp. Salt
  • Extra Virgin Olive Oil or Coconut Oil (for cooking)

TOPPINGS

  • Maple Syrup (or Agave Syrup or Honey)
  • Fresh Berries or Fruits
  • Nut Butter (Almond, Peanut, Cashew, etc.)

DIRECTIONS

1 - WHIZZ: Add all the ingredients to a blender and blend for 1 to 2 minutes until smooth.

2 - HEAT: Heat up your pan or griddle, and add a drizzle of olive oil (or coconut oil) over small-to-medium heat.

3 - POUR: Ladle in your batter and cook for 2-3 minutes, or until each pancake starts puffing up and bubbles start to appear.

4 - FLIP: Flip each pancake and cook until both sides golden.

5 - SERVE & ENJOY! Transfer to a plate or tray, add toppings of choice, and enjoy!
