100g skinned almonds
80g dried strawberries
1 tsp ground cinnamon
Pinch of salt
120ml clear honey
60ml melted coconut oil
1 tsp vanilla extract
Preheat oven to 160°
Line a baking tray with parchment paper.
Toss the oatmeal, almonds, cranberries, seeds, cinnamon and salt in a large bowl.
Add the honey, coconut oil and vanilla and stir to combine.
Spread onto the prepared baking tray and bake for 45 minutes, stirring every 15 minutes.
Allow granola to cool completely at room temperature before transferring to an airtight container.
