Creamy Vegan One Pot Pasta

Simple, quick and cozy dish, perfect for lunch or dinner, with comforting pasta, mixed vegetables, and a creamy tomato sauce! All you need is ONE pot or pan and 20 minutes for this healthy and versatile vegan pasta recipe!

INGREDIENTS

  • 250g Dry Pasta (Gluten-Free or regular)
  • 1/2 tbsp. Veggie Bouillon
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 3 Garlic Cloves, minced
  • 1 Small/Medium Onion (Red or Yellow, chopped)
  • 1-2/3 Cup Broccoli
  • 1 Cup Zucchini, chopped
  • 1 Cup Red Pepper, chopped
  • 2 Cups (500mL) Water
  • 1-1/4 Cup Tomato Sauce
  • 1/2 Cup Canned Coconut Milk

DIRECTIONS

1 - ADD all the ingredients to a large pot, pan or wok, and stir to combine. Bring the mixture to a boil, then reduce the heat to low and let cook for 10 or 12 minutes - or until the pasta is al-dente - stirring every minute.

2 - GARNISH with fresh herbs, vegan cheese, and/or nutritional yeast.

3 - SERVE immediately and enjoy!
