You only need a few carefully picked ingredients and you’re good to go! Not only are the ingredients used in this recipe totally healthy, but vegan, gluten-free, and refined sugar-free too! Talk about perfect. Dates are high in fiber and disease-fighting antioxidants. Dates are also highly rich in nutrients such as potassium and at the same time contain very low levels of sodium which makes it an extremely successful fruit in ensuring your neurological health. And the rest of the ingredients in these bars?! Totally nutritious. Whole oats. Coconut Oil. Maple Syrup. Almond butter. Talk about a lot of fiber, a lot of omega 3s, and a lot of chewy deliciousness going on.

You will need:

  • Small Saucepan
  • Spatula
  • 2 Bowls
  • Cupcake Baking Tray
  • Cupcake Paper Cups

  • 2/3 Cup Gluten Free Oat Flour
  • 1/2 Cup Gluten Free Rolled Oats
  • Pinch of Pink Himalayan Salt
  • 1/2 tsp Cinnamon
  • 1/2 tsp Cardamom
  • 2 tbsp Coconut Oil
  • 2 tbsp Almond Butter
  • 1 tsp Maple Syrup or Honey


  • 10 Mini Pitted Sticky Dates
  • 1/4 Cup Water


Step 1

First, make your date filling, which requires just two ingredients – dates and water. Bring to a boil, and then let simmer for 7-8 minutes until the dates have softened. Towards the end of the cooking time, mash the dates with a fork which helps them absorb any remaining liquid.

Step 2

Get started on the crust by adding all your dry ingredients to a bowl and mixing well. Then in another bowl, add the almond butter, coconut oil, maple syrup, and mix well. Add the dry ingredients on top and mix again until they form a solid paste.

Step 3

Line your cupcake baking tray with paper cupcake cups and cover the base of each with the paste you just finished. Then, add some filling in the middle to taste and finally cover the top with the paste.

Step 4

Bake for 15 to 20 min at 180 degrees.
