Fudgy Black Bean Brownies

Fudgy Black Bean Brownies

These gluten-free black bean brownies are so fudgy and delicious no one will be able to tell that they’re flourless and made with beans! The black beans add a little extra fiber and protein, which is not only awesome for dietary purposes, but it also means you can blend the batter right in your food processor or blender!

  • 500g Black Beans, drained and rinsed
  • 3 Large Free Range Eggs
  • ½ Cup Pure Maple Syrup
  • ⅓ Cup Melted Coconut Oil
  • ¼ Cup Unsweetened Cocoa Cowder
  • ⅛ Teaspoon Fine Sea Salt
  • 1 Teaspoon Pure Vanilla Extract
  • ½ Cup Dark Chocolate Chips
  • ⅓ Cup Chopped Raw Walnuts, optional

  • Food Processor or Blender
  • Baking Pan

1 - PREP: Preheat the oven to 180°C and grease a 20cm × 20cm baking pan.

2 - BLEND: Place the beans, eggs, maple syrup, coconut oil, cocoa powder, salt and vanilla in a food processor or blender and blend until smooth.

3 - COMBINE: Stir in the chocolate chips and walnuts (if using). Another option is to sprinkle the walnuts on top of the brownie batter once you pour it into the pan.

4 - BAKE: Transfer the mixture into the prepared pan and bake for 35 minutes, or until brownies are set in the center.

5 - SERVE: Cool completely, cut into squares and enjoy!

Store leftover brownies in the fridge for up to one week or in the freezer for up to 3 months.
