Paleo Gingerbread cookies by Tamara Qaddoumi


Nice cookies that taste so naughty!
What better way to celebrate the holiday festivities without the gilt.
Get your kids in the kitchen for these divine gingerbread cookies. They won't even know the difference.

  • 1/2 cup melted & cooled coconut oil
  • 1/2 cup coconut sugar
  • 3tbs molasses
  • 2 eggs - at room temperature
  • 1 tsp vanilla
  • 2 cups almond flour
  • 3/4 cup coconut flour
  • 1/2 tsp baking soda
  • 2tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp all spices
  • 1/2 teaspoon salt
Icing ingredients:
  • 1 cup coconut sugar(brown icing) / Sugar cane (white icing)
  • 1 tsp softened vegan butter
  • 1/2 tsp vanilla
  • 1 tsp almond milk
Directions for the cookies:
  • Pre heat over at 170C
  • Add in your liquids
  • Add your sugar
  • Add your eggs
  • Add your molasses
  • Mix well
  • Add your dry ingredients
  • Mix all together
  • Transfer your dough to a flat board
  • Pat between two parchment paper
  • Roll your dough nice and thin (1/2cm thickness)
  • Remove parchment paper and let the fun begin
  • Get creative with any cookie form you like
  • Bake 8-10mins
Directions for the icing:
  • Add in all your ingredients and mix well using an electric mixer
  • Pour in zip-lock bag
  • Mix & Match
  • Make the smallest hole in the bags
  • Get creative with decorating your cookies
