Gluten Free Tapioca Crepes

3 Reasons why I love this recipe and why you will too!

  • It's super versatile - can be eaten as sweet > crepes filled with homemade chocolate spread or jam for example AND you can use them as a sandwich wrap filled with veggies + chicken/beef/eggs + some guac/pesto/almond butter... the sky is the limit!
  • You only need 3 ingredients to make them: tapioca flour, water and eggs
  • Their texture is super flexible and they won't break like your usual gluten-free/paleo breads

Recipe (Makes 1):

  • 1 Tbsp Tapioca Flour
  • 1 Egg White
  • 1 Tbsp water
  • Dash Himalayan salt
  • Optional 1/2-1 tbsp maple syrup/honey
