Homemade Chocolate Easter Eggs

These homemade chocolate easter eggs require just a few simple wholesome ingredients and make a much healthier treat for filling up those Easter baskets! 

INGREDIENTS

  • 1/3 Cup Rolled Oats
  • 3 Tablespoons Desiccated Coconut
  • 1 Tablespoon Raw Honey
  • 1/2 Teaspoon Vanilla Extract
  • 1 Teaspoon Water
  • 50g Dark Chocolate (70% Cacao or Higher)

DIRECTIONS

1 - Start by lining a tray with baking paper and setting aside.

2 - In a blender or food processor, blitz the oats, coconut shreds, honey, vanilla and water until smooth and combined.

3 - Mold the mixture into small or large egg shapes and place in the freezer until firm.

4 - Once the eggs are frozen, melt the dark chocolate using your preferred method (microwave is easiest) and dip the eggs into the melted chocolate making sure to cover them completely.

5 - Place the chocolate-covered eggs on the tray and place it in the fridge for the eggs to set.

Optional: Decorate the eggs before the chocolate sets using your preferred decorations.

To store, keep the eggs refrigerated in an airtight container.
