After a few days, maybe weeks, the keto can get boring at breakfast time if you are not an egg aficionado. Of course, there are plenty of quiches, omelettes and variations of egg recipes that are protein loaded, creative and delicious, but whatever happened to a sweet breakfast? Pancakes anyone? You might think it has butter, wheat flour or sugar, which is the case in many packaged pancake mixes. Thankfully, there are substitutes and keto pancakes exist!

Keto Pancake Recipe

With ingredients like almond and coconut flour to substitute wheat flour, we are ready to start a sweet keto morning.

Here is the list of ingredients:

- 1 cup blanched almond flour

- ¼ cup coconut flour

- 2-3 tablespoons sweetener

- 1 teaspoon baking powder

- 5 large eggs

- 1/3 cup unsweetened almond milk

Very Easy Preparation:

Whisk all the ingredients in a bowl until well mixed. Once the batter is ready cook each pancake in the griddle or pan. With the amounts stated above, you can get 10 to 15 pancakes, depending how thick you make them. You can double the recipe if need be! Suggested toppings that are low in sugars include strawberries, blueberries, chopped nuts or even sprinkle with some dark chocolate! The only restriction in this recipe that you should stick to is the syrup. Because agave, maple and honey have a lot of sugar, we recommend a sugar free option to top it.

Coconut Flour Benefits:

A healthy flour option is coconut flour, made from dried coconut solids that are made into powder, with a light and airy texture and flavor. It has a high fiber content and recipes usually use small amounts. It has a strong capacity to absorb liquid, meaning more eggs or milk need to be added. The health benefits of coconut are contained in coconut flour, including the healthy fats it has, its high lauric acid content (which is another type of fat that keeps your skin glowing) and its low carb content yet filling effect. 

Almond flour benefits

Almond flour is becoming a popular wheat flour substitute in health circles not only because it has less carbs, but also because its high nutrient content and somewhat sweeter flavor. It can reduce ‘LDL’ or bad cholesterol as well as insulin resistance. It has a high amount of vitamin E, which can work as a strong antioxidant in the body. It is also rich in magnesium, which is said to improve blood sugar levels.
