Peanut Butter & Jelly Rice Cakes By Mira Hoss

The Giant Peanut Butter Rice Cake going viral on TikTok is not only delicious, but also nutritious and super easy to prepare! It’s the ultimate healthy snack to satisfy sweet cravings, and it comes along in no time at all!

You will need:

  • Cooking Pot
  • Spatula
  • Large Plate or Tray
  • Small Bowl
  • Freezer

  • 6 to 8 Rice Cakes
  • 2 Cups Fresh or Frozen Berries
  • Squeeze of Lemon
  • 1 tbsp. Maple Syrup
  • 1 tbsp. Chia Seeds
  • Peanut Butter
  • Melted Dark Chocolate
  • 1 tbsp. Coconut Oil


Place 2 cups of fresh or frozen berries into a pot, and squeeze half a lemon on top. Add 1 tablespoon of maple syrup and 1 tablespoon of chia seeds into the pot, then mix and mash everything while cooking on a low heat until you get a jam consistency.

Place the rice cakes on a tray or plate, then with a spatula or spoon, spread peanut butter first, and the berry jam second, making sure to cover the rice cakes entirely.

In a bowl, mix melted dark chocolate with 1 tablespoon coconut oil, then spread over the berry jam.

Place the tray or plate in the freezer, and wait until the spread is solid. And, voila! Your tasty, healthy snack is ready to be enjoyed!
