These cookies will satisfy your sweet tooth without making you crash! It’s a rich, low carb treat made with very few ingredients, guaranteed to impress the whole family. Using almond butter keeps your carb macros in check, provides some protein, lots of good fats and important nutrients - like magnesium, potassium, vitamin E and calcium.
Tools:
- Measuring cups/spoons
- Oven -Baking sheet
- Parchment paper
- Small forks to flatten cookies
- Bowl to mix the dough
- Medium bowl for the filling
- Hand mixer
- Gloves preferably non-latex
- Cooling rack
Cookies Ingredients:
-1 cup creamy smooth almond butter
-¼ - ½ cup Switch sweetener (depending on your preference)
-1/2 tsp pure vanilla powder
-1 organic egg white (at room temp)
-1/4 tsp Himalayan salt
Instructions:
1- Preheat oven to 175C 2- In a bowl, mix all dry ingredients together. In another bowl, mix wet ingredients then add to the dry ingredients and mix using your hands. 3- Divide the dough into 12 balls and press down into circles using a small fork. 4- Bake for around 20 min – until golden brown 5- Cool completely before removing from the tray, otherwise they will crumble!! 6- Store in an airtight container in the fridge
Creamy Filling Ingredients:
- ½ cup coconut cream (refrigerated overnight)
- ¼ cup nutiva shortening
- 3/4 cup Swerve sweetener
- 1 tsp pure vanilla powder
Cookies Instructions:
1-While cookies are cooling, take a medium mixing bowl and using a hand mixer beat together coconut cream and shortening. Slowly add in your powdered sweetener until creamy
2- Using a spoon place filling on the bottom of a cookie and top with another cookie
Tip: When placed in the freezer for about 30 min these taste like ice cream sandwiches!
