Recipe via @loveandlemons

  • 1 Cup Chickpeas, soaked for 24 hours, drained, rinsed, and patted dry
  • 1 Cup Chopped Fresh Cilantro Leaves
  • 1 Cup Chopped Fresh Parsley Leaves
  • ½ Cup Chopped Shallot or Yellow Onion
  • 3 Cloves Garlic
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Ground Coriander
  • 1 Teaspoon Lemon Zest
  • ¾ Teaspoon Sea Salt
  • ¼ Teaspoon Cayenne Pepper
  • ¼ Teaspoon Baking Powder

  • Food Processor
  • Baking Sheet
  • Parchment Paper
  • Spatula or Spoon

1 - PREP: Preheat your oven to 200°C and line a large baking sheet with parchment paper.

2 - WHIZZ: In a large food processor, place the chickpeas, onions, garlic, lemon zest, cumin, coriander, salt, cayenne, baking powder, cilantro, parsley, and olive oil and pulse until well combined - but not pureed!

3 - ASSEMBLE: With your hands, form 12 to 15 thick patties. If they're not holding together, give the mixture a few more pulses in the food processor.

4 - BAKE: Place the patties on the baking sheet, and drizzle generously with olive oil. Bake for 14 minutes, then flip and bake for another 10 to 12 minutes (or until golden brown and crisp on the outside).

And enjoy!
