Vegan Shortbread Cookies With Tamara Quaddoumi

Christmas is right around the corner, and what better way to get into the festive mood than with baking delicious desserts that are healthy and tasty? Certified Holistic Health Coach and Mint Basil Expert Tamara Quaddoumi share a super easy, super tasty cookie recipe that is perfect for the holidays!

Soft, chewy, and gluten-free, these vegan shortbread cookies are easy to make, fun to decorate, and delicious to eat - great for kids, adults, and Santa!  


You can find most of these ingredients on


  • 2 Cups Rice Flour
  • 1/2 Cup Potato Starch
  • 1/4 Cup Tapioca Flour


  • 3/4 Cup Gluten-Free Flour Mix
  • 1 Cup Almond Flour
  • 1/2 Cup Tapioca Flour
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Sea Salt
  • 1/4 Cup Solid Coconut Oil
  • 6 tbsp. Maple Syrup



1) Start by preheating your oven to 180 degrees Celsius.

2) Mix all your dry ingredients well, then add in the coconut oil. Use a spatula to mix everything well until a sandy grainy texture that can be clumped up is obtained.

3) Next, pour in the maple syrup and mix well until you get a dough (if the dough is too soft, place the mixture in fridge for 20 minutes).

4) Spread a piece of parchment paper on your counter and neatly place the dough on it, then cover with another parchment paper on top. Using a rolling pin, flatten the dough until you are left with 1/4 inch thick dough (be sure not to roll too thin!).

5) Next, grab a cookie cutter or glass cup and cut your dough into cookie shapes. Using a butter or cheese knife, gently transfer the cookie doughs onto a baking sheet on your baking tray.

6) Place the tray in the oven for 10 minutes (or until edges are golden), and enjoy!
